    Coconut Chia Pudding

    So if you've tried a chia pudding recipe out there and weren't a huge fan... please give it another shot. Please. For me? Because I get you! I've tried my fair share of takes on a chia pudding that I wasn't in love with, and I've finally landed on my favorite way of making it. This easy coconut chia pudding is the answer!

    Coconut and Passion Fruit Chia Pudding

    The secret to a creamy and flavorful chia pudding is to use flavored yogurt! My 2 favorite types to use are coconut yogurt and vanilla yogurt. In this recipe, I've used coconut yogurt and strengthened the flavor of coconut even further with some coconut chips on top. But I also make it with vanilla yogurt and add a dash of vanilla extract - it's all about building up that flavor! And of course, it's perfect with fresh fruit and nuts for a good crunch. Just use what you have on hand. This recipe calls passion fruit which pairs perfectly well with the coconut and gives me all the tropical feels.

    This coconut chia pudding recipe can't get any easier. You just mix all the ingredients together the night before, place in an airtight container, and leave it in the fridge overnight. If you want to be even more prepared, you can cut up your fruit and have that ready to go as well. In the morning, you mix, top up with garnish and enjoy! It's a great portable breakfast too, you can take it with you on the go.

    Ingredients

    • 1 ⅓ cup coconut yoghurt
    • 3 tbsp maple syrup or more per preference
    • ⅓ cup chia seeds
    • 1 cup milk of choice
    • Coconut chips or shredded coconut for garnish
    • Passion fruit or other fruit for garnish

    Instructions

    • Mix all ingredients together in a bowl and taste to test sweetness and adjust. Leave overnight in the fridge. 
    • When serving, add your passionfruit on top and sprinkle with coconut flakes. Enjoy!
