About the Cookbook

I am SO thrilled to finally share my debut cookbook with you. This homestyle cookbook gathers the best of the region—dips, condiments, salads, sides, mains, soups, stews, desserts, and drinks—using easy-to-find, fresh ingredients and delicious Arabic spices. In Souk to Table, you’ll find:

  • 100 easy-to-make and delicious recipes from Amina’s homeland of Iraq, as well as Lebanon, Egypt, Turkey, Morocco, and beyond
  • Dinners that can be made in under 30 minutes, and one hour for easy weeknight cooking, as well as traditional dishes “worth the effort” for weekend cooking
  • A simpler approach to Middle Eastern cooking without sacrificing any of the authentic flavors
  • A stunning photo accompanying every recipe
  • How to stock your pantry PLUS substitutes for every single middle eastern ingredient!

Growing up, one of my famous phrases whenever I’d be in the kitchen with my mom, helping her prepare elaborate dinners is: “I’m never going to do this when I have my own family. I’ll just order pizza. Or I’ll pay someone to cook for me.”

Fast forward many years, and I now not only cook most days of the week, but I enjoy it. But I did still stick to my younger self’s promise: I found easier ways to still make delicious food without labouring for hours over traditional dishes. And this cookbook is exactly that: recipes that celebrate the vibrant flavours of the middle east, but ones that you will come back to time and again because they are easier versions of my favourite dishes.

I curated these recipes from many countries across the region, to show how varied middle eastern cooking is. I also tested them vigorously to make sure they will work in your kitchens from the very first time! I truly hope you pick up a copy, flip through it, and find a recipe that calls your name every single day of the week!
