3-Ingredient Lazy Cake (No bake!)
Want a dessert with minimal effort? Make my incredibly easy 3-ingredient chocolate lazy cake. A dessert popular throughout the Middle East, this no-bake cake requires less than 10 minutes of prep time. Despite its simplicity, the result is a rich, creamy, and decadent chocolate frozen cake that everyone loves! You do have to wait patiently for it to set in the freezer, but I promise the cold chocolate and crunchy biscuits are worth it! My version of this cake is the easiest you’ll find.

My Childhood Must-Have Dessert!
At every birthday party my mother would throw us growing up, this frozen lazy cake was a feature on the table. Naturally – it is quite nostalgic for me. But the best part about the way I make it now is that I’ve found a short cut! I don’t use butter or eggs. I simply use the magic of a can of condensed milk!
And of course – you also need high quality cocoa powder, and it must be unsweetened. The combination of the cocoa powder and condensed milk will create an instant decadent chocolate sauce. Then crumble the tea biscuits in, shape into a log, roll and freeze and you’re done!
I’ve tested this recipe with Maria (or Marie) biscuits as well as digestive biscuits and prefer it with the Maria brand. But digestive will work quite nicely too.
By the way, if you’re not patient enough to wait for it to freeze, try these chocolate biscuit balls inspired by this recipe and they only need the fridge.

Let’s Make It!
- Start by mixing the sweetened condensed milk with the cocoa powder. Whisk or stir with a spoon – don’t worry if there are a few lumps.
- Taste the mixture and adjust it to your desired sweetness by either adding more condensed milk for more sweetness or more cacao powder for more chocolate flavour.

- Next, crumble up the biscuit into the mixture. It’s important to use small sized biscuit crumbs like in the picture, but also try and incorporate really small crumbs in there as well to help the mixture hold.

- The last step is shaping the mixture. Do this by spreading out some plastic wrap (or cling film) and spooning the mixture in the centre in the shape of a log. Slowly wrap the plastic around the mixture and tighten as you do this to shape into a cylindrical log.

- Next wrap the log with foil to help it maintain its shape and place it in the freezer for at least 8 hours, but preferably overnight.
- NOTE: You need to wrap this up in plastic wrap. If you don’t and you use foil straight away, it will stick to it. The plastic wrap will peel right off when you’re about to cut it.

- If you have trouble shaping this into a log shape, you can simply lay plastic wrap inside a loaf tin and spoon the mixture in there. You will end up with square or rectangular shapes.
- When you’re ready to serve, cut into 1 inch thick slices using a sharp knife. Wrap up the rest and pop it back in the freezer for up to 3 months.

Ingredients
- 300 g Tea Biscuits, Maria Biscuits or similar brand
- 397 g Condensed Milk, usually equivalent to 1 can
- 7 tbsp Unsweetened Cocoa Powder, or more per preference
Instructions
- In a bowl, use a spoon to mix the 397 g Condensed Milk with the 7 tbsp Unsweetened Cocoa Powder very well. It's okay if you notice a few lumps.
- Crumble in 300 g Tea Biscuits using a mixture of small pieces and crumbs, and combine well, ensuring all the biscuits are coated.
- Spread out a large piece of plastic wrap on the counter, and spoon the mixture in the middle. Be careful to not skip the plastic wrap. Using foil directly will stick to the lazy cake after freezing.
- Mould it into a log shape by wrapping the cling film around it and twisting at each end. See notes for easier shaping method.
- Cover the log with foil and freeze for at least 8-12 hours or preferably overnight.
- To serve, unwrap the foil and start peeling the plastic wrap up to the point you want to cut, then cut 1/2 inch to 1 inch thick slices with a sharp knife that has been dipped in hot water. Serve immediately!
Notes
- If you struggle to create a log shape, you can line a loaf pan with cling film and spoon in the mixture inside for square/rectangular shapes.
- Don’t skip the plastic wrap! If you only use foil it will stick to the cake once frozen. The plastic wrap however will peel right off before you cut it.
- If the plastic wrap starts sticking to it, it means you need to freeze it for longer. Pop it back in the freezer and try again. Optimum freezing time is overnight.
- The lazy cake can stay in the freezer for a few months. Just ensure that you return it to the freezer after you’re done cutting

Where am I going wrong?
Hello! Did you make sure to measure out the ingredients exactly as listed? The cookie to condensed milk ratio is really important. If you don’t have enough cookie mixture in there, the mixture will be softer/sticky. Also, it will need to be frozen for longer perhaps, and depending on where in the freezer you put it (ie in the door is not as cold as deeper into the freezer). Try to give it more time and double check the measurements. Hope it works out for you! 🙂

Would you by any chance have the measurements for the digestives and cocoa in the chocolate biscuit balls recipe that uses a full can of condensed milk (397g)?

As for the full 397g sweetened condensed milk, I would add another 100g of the biscuits in there and adjust the cocoa with another half tablespoon (you can always keep cocoa the same, taste, and add more to your taste). Can we replace condensed milk with almond milk?
Hi Rania! No, unfortunately you can’t because the condensed milk is thicker than almond milk and also includes sugar.
